Year of the Wood Horse

With a tricky Year of the Snake behind us, we entered the Year of the (Wood) Horse. For the third consecutive year, we collected several useful article links about what’s trending in 2014. Here is a closer look at what is in store for us in the Hospitality Industry, Health Travel, Healthy Ageing, Spa & Wellness, Food & Beverage concepts and Culinary Developments.

As for food predictions by Hospitality in Health: we’ll learn more about Food Synergy (and Super Eating), and we foresee the rise of the Health Chefs. Peruvian Cuisine, amongst other ‘Indigenous foods’), will be adopted as World Heritage Cuisines, and (not surprisingly), we foresee an increase in Farm-to-Fork and Sea-to-Spoon formula’s. A natural (re)alignment between sustainable & healthy foods will begin to take form and we predict a renewed/more sophisticated ‘back to basics’ movement – eating like we did in the past, coupled with rediscovered knowlegde about the origin of our foods, presented in a modern fashion. This movement will possibly be backed by science with new evidence-based material on nutritional values of whole foods and e.g. fermented foods. After ‘meat substitutes’ we’ll also start seeing innovative ‘bread substitutes’. Personally we hope to see Korean Cuisine really breaking through this year, and we’ll hear much more than we already do about anti-Food Waste in the kitchens of our homes, Hotels & Restaurants and (specially) in Hospitals. What was trending in 2012? The Year of the Dragon was forecasted to become another challenging year for some of us in the Hospitality Industry – yet with some interesting global trends, including a growing demand in luxury Health Travel, intelligent holistic Spa & Wellness concepts (for both Business and Leisure travelers) and corporate wide initiatives in sustainable/organic/local/healthy F&B concepts. The rediscovery of Eastern Europe and HeritageTourism as well as Nature Tourism is something to keep an eye on. And most interestingly is of course if the Arab Spring movement would continue to awaken or slowdown renewed tourism & destination opportunities throughout the Middle East.
